Regent Singapore's Mid-Autumn Collection 2020

Upholding Mid-Autumn traditions while celebrating the culinary diversity of Singapore, Regent Singapore’s repertoire of award-winning dining destinations, headlined by Michelin one-star Summer Palace, showcase their creative combination of contemporary snowskin mooncakes and signature baked skin collection.  

Last year, Regent Singapore went one step further to include each dining outlet’s unique spin on the Mid-Autumn staple. The tradition continues this year, with Basilico working around quintessentially Italian ingredients. Prized Amarena cherries from Bologna – a sour, dark varietal of fruit grown in Bologna famed for their luscious notes – are paired with Sicilian pistachios and the honeyed sweetness of dried figs in the Pistachio, Fig and Amarena Cherry snowskin mooncake.

Dreamed up in Basilico’s Espresso Room, the Double Espresso and Almond Marzipan snowskin mooncake also carries the spirit of Italian tradition. One bite of this dark confection is akin to spending a slow afternoon at an Italian coffee bar, where one would enjoy an almond pastry while sipping on a strong espresso.

Crafted with the finest green tea from trusted tea partner, Gryphon, the earthiness of the Green Tea with Melon Seeds is complemented by a toasty crunch.  

Head bartender of Manhattan, Sophia Kang, once again looked to the bar’s impressive collection of dark rums to dream up a tropical combination of Plantation Rum, Spiced Coconut and Yuzu in the Macapuno mooncake.

Dim Sum Chef Leong Kwok Sing of Summer Palace is a master of the classics. Bestselling flavour year after year, the Signature Black Sesame Paste features a stunning juxtaposition of cushion-soft pearlescent skin and a jet-black filling of finely ground black sesame.

Another traditional creation, the White Lotus Paste with Salted Egg Yolk and Melon Seeds sees a sweet-salty contrast coupled with a welcome crunch.

Mao Shan Wang Durian snowskin mooncakes also made a return this year. At the height of durian season, the king of fruit is pureed into a pure, rich filling wrapped within a velvety snowskin that makes for one heavenly bite after another.

Chef Leong also debuts a zesty Orange and Pine Nuts mooncake, which features a smooth tangy filling studded with buttery pine nuts for crunch. Light and refreshing, the cherubic morsel is clad in a coral pink hue.

This year’s collection is housed in an elegant box that transforms into a lantern, paying homage to the traditions of the Mid-Autumn Festival.
