SINGAPORE, December 2018 – This Spring Festival, luck and good fortune abound with an auspicious Year of the Pig. At one Michelin-starred Summer Palace, exquisite dining experiences await with curated menus that feature an abundance of prosperous ingredients.
Auspicious Dining at Summer Palace
From January 25 to February 19, 2019, Summer Palace’s Executive Chinese Chef Liu Ching Hai introduces 11 specially crafted set menus, including an elaborate Gold Menu for 10 ($3,988) and individual menus priced from $88 per person.
In the Pearl Menu Lunch Set ($88 per person), exquisitely crafted dim sum star in the form of Barbecued Pork Buns with Pine Nuts; Steamed Minced Shrimp Dumplings with Bird’s Nest; and Deep-fried Chicken and Lobster Roll.
In the Phoenix Menu ($1,288 for 10 persons), guests can look forward to Braised Fish Maw Soup with Crab Meat, Bamboo Pith and Conpoy in Superior Chicken Stock. The experience continues with Braised Dried Oyster with Black Moss in Bean Curd Skin while the customary “da yu da rou” that is required of every Chinese New Year meal is served up in platters of Steamed Live Pearl Garoupa in Hong Kong-style and Roasted Crispy Chicken with Prawn Crackers.
Set menus are available for lunch and dinner, and range from $88 per person (Pearl Menu; lunch only) to $3,988 for 10 persons (Gold Menu).
Chinese New Year celebrations are never complete without a festal tossing of Yu Sheng. As a special themed creation, Chef Liu presents eight adorable white chocolate piglets nestled amid the traditional accompaniments. Mindful of striking the right flavour balance, the plum sauce is tweaked to be less sweet. On the menu are eight options that include everything from traditional Smoked Salmon ($88) to more unique combinations such as Bird’s Nest and Pear ($138), Marinated Hokkigai Clam with Jellyfish ($98) and a vegetarian Purple Cauliflower with Lily Bulbs ($88).
Customise your preferred toppings with additional accompaniments that include Poached Lobster, Salted Egg Yolk Crispy Fish Skin, and Fish Lip (from $10 per portion).
Prosperity Hampers and Festive Gifts
Pick up takeaways and festive cookies that will complete the celebrations at home. From January 11 to February 4, 2019, stock up on Pineapple Tarts, Charcoal Love Letters, Almond Sugee, Prawn Rolls and Kueh Bangkit (from $28 per bottle). Also available are auspicious meats, featuring Whole Suckling Pig and Roast Duck; and house-made specialities of Steamed Turnip Cake ($38), “Fatt Cai Yu” Prosperity Jelly ($38) and “Nian Gao Fish” ($38) - a brown sugar glutinous flour cake with red dates.
