Regent Mooncakes: The Legendary Collection

Upholding Mid-Autumn traditions while celebrating the culinary diversity of Singapore, Regent Singapore’s repertoire of award-winning dining destinations, headlined by Michelin one-star Summer Palace, showcase their creative combination of contemporary snowskin mooncakes and signature baked skin collection.  

It all started last year, when Summer Palace’s Chinese Dim Sum Chef Leong Kwok Sing partnered with Manhattan, #3 on The World’s 50 Best Bars, to introduce two new Manhattan-exclusive snow skin mooncake variants with a barrel-aged Sazerac 6-year-old rye and La Louisiane Cocktail. The alcoholic cores were a hit against creamy coffee and yuzu fillings.

This year, Regent Singapore went one step further to include each dining outlet’s unique spin on the Mid-Autumn staple. Basilico stepped up to the plate and reimagined one if its bestsellers: Truffle Carbonara. Executive Chef Angelo Ciccone took the aromatic components of black truffle and combined it with silky smooth cream cheese for a velvety paste. Almost savoury but with a bare tinge of sweet, this new snowskin flavour even carries black striations on its skin to mark its main ingredient.  

Not to be outdone, Culinary Olympics Gold Medallist, Pastry Chef Alex Chong of Tea Lounge also went with what he does best – stunning desserts. A Yuzu Strawberry Cheesecake mooncake was born, featuring just the right combination of fresh, sweet strawberries and tangy yuzu, all wrapped in a creamy cheesecake filling with a dainty powder-pink skin.

Of course, Manhattan looked to its impressive rickhouse and selected a barrel-aged Hanky Panky blend, comprising Ford’s Gin, Cocchi di Torino and Fernet Branca bitters. The alcohol in the filling is then tempered with crunchy, dark chocolate Valrhona pearls for a sweet aftertaste.

While the chefs were getting creative, Summer Palace went back to basics, pulling out a floral osmanthus variant from its collection of speciality Chinese teas. They didn’t stop there. Dim Sum Chef Leong Kwok Sing also employed antioxidant-rich purple cauliflower to add a striking purple hue to the cushiony Osmanthus Tea and Purple Cauliflower snowskin. The result? A subtly fragrant creation you’ll want to go back to over and over again.

Chef Leong also debuted a second flavour of Sugar-free Pandan Custard studded with crunchy hazelnuts. Together with signatures like Black Sesame Paste, Green Tea with Melon Seeds and White Lotus Paste with Egg Yolk and Melon Seeds, all the flavours above come together in a stunning 8-pc Regent Snowskin Collection.

About the 2019 mooncake box

Representing Regent Singapore as the sum of all its parts, this year’s mooncake box takes on the structure of the hotel’s bubble lifts – its most distinct feature within the John Portman-designed atrium. The sturdy red box has a textured feel with the same gold Oriental panels seen in this year’s headline act, one Michelin-starred Summer Palace. The bronze lock adds a touch of premium luxe and opens the doors to four separate shelves, each lined with silk ribbon for easy drawing of the delicious flavours within. An eye-catching highlight, this year’s collection makes a statement piece for treasured Mid-Autumn gifts to family, friends and business associates.
