Savour the succulent meat and luscious roe from this season’s prized crustaceans - the Hairy Crab. Fresh from the Yang Cheng Lake of Suzhou in Shanghai, the Hairy Crab is famed for its rich, reddish roe. Chinese Executive Chef Liu Ching Hai and his team has curated a unique à la carte menu to showcase the versatility of the Hairy Crab.
Expect dishes such as the Braised Royal Bird’s Nest with Hairy Crab Meat, Braised Angel Loofah with Hairy Crab Meat, Deep-fried Cod Fillet with Hairy Crab Meat, or simply enjoy its natural flavour; steamed and accompanied with a specially brewed ginger tea.
NEW CHAPTER: A MICHELIN CELEBRATORY MENU

Summer Palace will introduce New Chapter, a special five-course Michelin celebratory menu ($88++ per person) that will be available for lunch and dinner. Marking the third year of this accolade, the menu is themed around the highlights of Chef Liu’s career. (Three in Cantonese translates to 生 saang, which sounds similar to life.) Inspirations behind the dishes were drawn from iconic moments, such as when he first learned the intricacies of stir-frying, right down to his early days of fatherhood when he attempted to wean two fledgling gourmets.

Aligned with the seasons, Summer Palace’s current menu takes cues from the onset of autumn.
