Summer Palace

Awarded Michelin one-star, savour classic Cantonese dishes and an extensive selection of dim sum delicacies at Summer Palace, lauded time and again for both its exquisite cuisine and traditional oriental interior. Inspired menus by the restaurants two Hong Kong chefs are complemented by a collection of fine Chinese art and antiques. Besides à la carte and set menu options, Chef's five-course lunch and six-course dinner menus are also available. For private business and social functions, two private dining rooms are available.

Committed to showcasing in-season ingredients at their prime all year-round, Executive Chinese Chef Liu Ching Hai wraps up the year with a Winter Treasures menu. Comprising tummy warmers such as Double-boiled Fish Soup with ‘Tianma’ and Fish Maw; crisp-bottomed Preserved Meat Claypot Rice; and Baked Eel Tarts with Mushrooms, the month-long specials are comfort foods at their best.

Every month, dim sum Chef Leong Kwok Sing dishes out appetising dim sum fittingly curated for each season. Look forward to relishing in piping hot, traditional dim sum infused with special flavours that tie in with seasonal ingredients yielded throughout the year.

This Spring Festival, luck and good fortune abound with an auspicious Year of the Pig. At one Michelin-starred Summer Palace, exquisite dining experiences await with curated menus that feature an abundance of prosperous ingredients.

From January 25 to February 19, 2019, Summer Palace’s Executive Chinese Chef Liu Ching Hai introduces 11 specially crafted set menus, including an elaborate Gold Menu for 10 and individual menus priced from $88 per person.

Summer Palace Prosperity Yu Sheng

Chinese New Year celebrations are never complete without a festal tossing of Yu Sheng. As a special themed creation, Chef Liu presents eight adorable white chocolate piglets nestled amid the traditional accompaniments. Mindful of striking the right flavour balance, the plum sauce is tweaked to be less sweet. On the menu are eight options that include everything from traditional Smoked Salmon to more unique combinations such as Bird’s Nest and Pear, Marinated Hokkigai Clam with Jellyfish and a vegetarian Purple Cauliflower with Lily Bulbs.

Customise your preferred toppings with additional accompaniments that include Poached Lobster, Salted Egg Yolk Crispy Fish Skin, and Fish Lip.

Prosperity Hampers & Festive Gifts

Pick up takeaways and festive cookies that will complete the celebrations at home. From January 11 to February 4, 2019, stock up on Pineapple Tarts, Charcoal Love Letters, Almond Sugee, Prawn Rolls and Kueh Bangkit. Also available are auspicious meats, featuring Whole Suckling Pig and Roast Duck; and house-made specialities of Steamed Turnip Cake, “Fatt Cai Yu” Prosperity Jelly and “Nian Gao Fish” - a brown sugar glutinous flour cake with red dates.

Specialising in classical Cantonese and focused on the use of fresh seasonal quality ingredients, Executive Chinese Chef Liu Ching Hai offers weekly rotational of the menus featuring his signature wok-fried dishes, traditional dim sum delights and a selection of nutritious double-boiled soups. Pearl (seats up to 12)

Decorated with intricate Asian armoire and its own lounge seating area, Pearl, is the perfect venue for smaller, more intimate occasions. Expansive glass windows allow guests to bask in the natural daylight or embrace the romantic evening ambience while enjoying a menu of classic Cantonese; promising a truly memorable gathering. Ideal for birthday celebrations and business meetings.


Jade (seats up to 50)

With floor-to-ceiling glass windows peeking over lush greenery and delicate oriental decorative details, Jade, provides a spacious and serene venue for lunches and dinner functions. Bold red patterned carpet lends a stunning contrast to the wood panelling of the room, while delicate 19th century Chinese porcelain vases with flower motifs and carved lacquer furnishings embellish it with harmonious grandiose. Ideal for birthday celebrations, solemnisations, social/corporate events and business meetings.

Liu Ching Hai, Executive Chinese Chef

Hailing from Hong Kong, Chef Liu is a veteran with over 20 years of experience in fine Cantonese cuisine. With the "aim to use the freshest and highest grade quality ingredients to create authentic yet innovative dishes", expect a uniquely memorable dining experience at Summer Palace.

Trained under Master Chinese Chefs Fok Wing Tin and Peter Tsang, Chef Liu's repertoire of delectable Cantonese cuisine has been savoured by international dignitaries, diplomats, Hollywood and Hong Kong celebrities; leading him to be recognised for the “Best Culinary Skills Award’’ in a competition hosted by the Hong Kong Tourism Association. Chef Liu's cooking philosophy stems from bringing diners Canton comfort using the freshest quality ingredients, presenting innovative creations with nuances of traditional Cantonese flavours.
