Regent Taipei to Present Series of Lemon-Inspired Desserts
In celebration of Spring, Regent Taipei created a tantalizing menu using fresh premier Bergamot Lemons from Southern France
Spring in France marks the season of bountiful produce and one treat not to be missed is the French Bergamot Lemon. Regent Taipei’s executive pastry Chef Lee is working with this world-class fruit along with aromatic blood oranges to create nine delectable desserts, which are available from 3/6 to 3/31, to be purchased at Regent Gift Shop (1F) and the Secret Garden (B2 of Regent Galleria).
Lemons are favored by chefs for their sweet yet tangy taste, a perfect accompaniment to an array of ingredients in various dishes. The Bergamot Lemon in particular, is prized for its alluring floral scent, which adds a certain complexity to any dessert. The aromatic blood oranges and local limes also feature prominently in this citrus-inspired dessert menu. Dishes include the Lemon Sponge Cake, Double Lemon Tart, Lemon Éclair, Lemon Cream Puff, Lemon Cheese Pie (sold at Regent Gift Shop) and Lemon Madeleine, Lemon Croissant, Lemon Chiffon and Lemon Custard Toast (sold at Secret Garden). Visitors to the Regent Taipei will have to act quickly as daily supplies are limited.
Chef Lee’s personal favorite is the Lemon Sponge cake, where fluffy chiffon cake is layered with citrus custard made from Bergamot Lemons and Blood Oranges. The seven-layered cake, moist and filled with a sweet lemon aroma, is then covered with an outermost layer of thick French Chantilly cream. Candied lemon peel and pistachio flakes are used as decoration. Other highly recommended pastries include the creamy Double Lemon Tart with lemon pudding and the thick, cheesy and floral-scented Lemon Cheese Pie.
