Lunar New Year Celebrations

SINGAPORE, December 2017 – This Spring Festival, usher in the auspicious Year of the Dog with an exquisite Michelin-starred dining experience, or celebrate the festivities as a family with a weekend escape at Regent Singapore. Fortune Menus

From February 5 to March 2, 2018, Summer Palace Executive Chinese Chef Liu Ching Hai introduces nine specially crafted menus, including a six-course Michelin menu that features auspicious favourites with fresh finesse.

To celebrate Summer Palace’s Michelin star award, Chef Liu indulges guests in a luxurious Michelin menu that will showcase culinary craftsmanship and unsurpassed quality; setting the stage for diners to enjoy a meal that excites the palate and senses.

For a start, guests can look forward to the combination trio platter of Truffle Peking Duck, Suckling Pig and Soft Shell Crab. The experience continues with a nutritious Braised Superior Bird’s Nest, Fish Maw and Chicken Broth in stone pot; brimming with flavours and a rich aroma. A Braised Three-Head Abalone in Supreme Oyster Sauce is sure to please, while meat lovers can tuck into a serving of succulent Stir-fried Australian Rib Eye with Black Pepper Sauce and Asparagus. Enjoy a generous serving of fresh lobster in Chef’s Stewed Boston Lobster Tail with Inaniwa Udon and Spring Onions, and polish off the meal on a delightfully sweet note with the Double-boiled Hasma and Almond Cream served in a Young Coconut.

Set menus are available for lunch and dinner, and range from $168 per person to $4,388 for 10 persons. The six-course Michelin menu is priced at $268 per person.

Chinese New Year celebrations are never complete without the customary Yu Sheng. Chef introduces two new creations for the traditional toss for harmony and prosperity. On the menu is a delightful Sea Cucumber with Okra and Sesame Sauce ($158), as well a unique Fish Lip Yu Sheng ($88). A blend of tropical fruits including lemon, orange, lime, pineapple, strawberry and a delightful apple jam is infused with Chef’s signature plum sauce to provide not only a healthy boost but also a uniquely delicious accompaniment for the big toss to usher in 2018.

With eight Yu Sheng alternatives, guests can also “toss up” success with the popular Nutritious Bird’s Nest and Pear Yu Sheng ($158) and Crispy Fish Skin with Salted Egg and Jellyfish ($88), among others.

Chinese New Year Banquet Celebrations

For business gatherings or a celebration with family and friends this Lunar New Year, Regent Singapore offers a menu selection of creative culinary offerings, perfectly complemented by unparalleled Four Seasons service.

All menus are specially crafted by Chinese Executive Chef Liu Ching Hai and his team at Michelin one-star Summer Palace, and prices range from $800 for lunch to $888 for dinner (per table of 10 guests).
