Flavours of Hong Kong: Double-boiled Soup
For the second series of ‘Flavours of Hong Kong’, Executive Chinese Chef Liu Ching Hai brings to the table, delicious and nutritious double-boiled soups. Each of the six soups on the menu is a concoction of ingredients specifically chosen and believed to treat various ailments; the natural cure for fatigue, rheumatism, improving blood circulation and enhancing the body’s overall immune system.
Hairy Crab Season
It’s time again to indulge in succulent crustacean meat and decadent crab roe. Apart from the classic steamed hairy crabs, we recommend the Crispy Hairy Crab Roll with Water Chestnuts and Celery, or the Braised Royal Bird’s Nest with Hairy Crab for a luxurious treat.
The Winter Solstice Festival celebrates the arrival of winter and a time for families to get together for a reunion. Chinese Executive Chef Liu Ching Hai crafts a special menu of all-time favourites and the symbolic 'tang yuan' (glutinous rice ball which represents 'reunion'), in hopes that families will continue to gather and celebrate this festival in modern-day Singapore.

Hailing from Hong Kong, Chef Liu is a veteran with over 20 years of experience in fine Cantonese cuisine. With the "aim to use the freshest and highest grade quality ingredients to create authentic yet innovative dishes", expect a uniquely memorable dining experience at Summer Palace.
Trained under Master Chinese Chefs Fok Wing Tin and Peter Tsang, Chef Liu's repertoire of delectable Cantonese cuisine has been savoured by international dignitaries, diplomats, Hollywood and Hong Kong celebrities; leading him to be recognised for the “Best Culinary Skills Award’’ in a competition hosted by the Hong Kong Tourism Association.
