This year’s box and new snowskin flavours (Pineapple Pink Peppercorn and Cinamon Red Bean with Spiced Wine), embrace the heritage of Singapore as a port for spice trade in the 18th century. Presented in a rustic pine wood box, the front panel with red motifs of the Singapore River slides open to reveal mooncakes individually encased in champagne tin boxes that can be reused to store spices. Other signature flavours such as Black Sesame Snowskin Mooncake and the well-loved baked classics such as the 24-month cured Parma Ham with Assorted Nuts are also available.

Specialising in classical Cantonese and focused on the use of fresh seasonal quality ingredients, Executive Chinese Chef Liu Ching Hai offers weekly rotational of the menus featuring his signature wok-fried dishes, traditional dim sum delights and a selection of nutritious double-boiled soups. Hailing from Hong Kong, Chef Liu is a veteran with over 20 years of experience in fine Cantonese cuisine. With the "aim to use the freshest and highest grade quality ingredients to create authentic yet innovative dishes", expect a uniquely memorable dining experience at Summer Palace.
Trained under Master Chinese Chefs Fok Wing Tin and Peter Tsang, Chef Liu's repertoire of delectable Cantonese cuisine has been savoured by international dignitaries, diplomats, Hollywood and Hong Kong celebrities; leading him to be recognised for the “Best Culinary Skills Award’’ in a competition hosted by the Hong Kong Tourism Association. Chef Liu's cooking philosophy stems from bringing diners Canton comfort using the freshest quality ingredients, presenting innovative creations with nuances of traditional Cantonese flavours.
